For so long now I’ve wanted to make mac and cheese muffins. I’ve searched far and wide to find the perfect recipe. I kept coming across the same one again and again (here), so I decided to give it a try. Not only was it easy to make and took very little time, but it was fun and, most importantly, absolutely delicious. I took the mac and cheese muffins to a potluck dinner I went to at my boyfriend’s parents’ house the other night (along with bruschetta, which I’ll get to next week), and they were a huge hit. The top part of the ‘muffin’ is crispy and the inside is perfectly cheesy. It’s the best combination, and you can eat it with your hands, which makes it a great choice for a party appetizer.
That is like seriously the most genius food EVER! I’m partially obsessed with mac&cheese and that looks delicious

Yummm these look so good! I’ve had the deep friend mac and cheese bits which I thought were a bit too much, but this looks like the perfect mix of crunchy and creamy.
