I love a good oatmeal raisin cookie. I decided to make a batch last night but I wanted to add a little chocolate to them (we know everything is better with a little chocolate). I also wanted to make them smaller than your average cookie. The recipe is simple and they turned out delicious.
Ingredients:
- 2 sticks of unsalted butter, at room temperature or slightly melted
- 1 cup dark brown sugar
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 1/2-3 cups oatmeal oats
- 1-1 1/2 cups raisins
- 2 bars of Hersheys Milk Chocolate
Directions:
- Preheat the oven to 350 degrees
- In a food processor, mix the butter, brown sugar, and granulated sugar together until light and fluffy
- Add the vanilla extract and eggs, one at a time
- Combine the flour, baking powder, cinnamon, and salt together into a big bowl
- Slowly add the ingredients from the food processor into the bowl and mix
- Add the oats and raisins and mix until all combined
- Scoop small mounds of dough onto baking sheets lined with parchment paper
- Bake for 12-15 minutes or until just lightly browned on the bottoms
- Let the cookies cool
- Cut the cookies in halves and quarters
- Melt the chocolate in a microwavable safe bowl
- Once cookies are cooled and cut, drizzle the melted chocolate on them
- Let cool a bit more and enjoy!
