Some of my friends took me out for a pre-birthday dinner last night. I wanted to bring them some homemade treats, so I decided on something I like to call ‘biscotti bites.’ They are mini versions of biscotti with bittersweet and white chocolate chips inside, dipped in chocolate. It was fun and fairly simple to make, and I must say, they were delicious.

Ingredients:
- 1 3/4 cups of all purpose flour
- 1 cup of sugar
- 1/2 teaspoon baking powder
- 1/2 cup of bittersweet chocolate chips – for the mixture
- 1/2 cup of white chocolate chips – for the mixture
- 1 1/2 cups of milk chocolate chips – to dip
- 1 1/2 cups of white chocolate chips – to dip
- 4 tablespoons of cold butter
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 2 eggs – lightly beaten

Directions
- Preheat oven to 350 degrees
- In a food processor, combine sugar, flour, baking powder, and salt
- Process for a few seconds
- Add butter and vanilla, and process until the mixture resembles coarse cornmeal
- Add chocolate chips (bittersweet and white – for the mixture) and eggs, and pulse until dough is evenly moistened
- Divide dough into 4 equal pieces, and press onto pans (with parchment paper) as ‘flattened logs’
- Bake for 25 minutes, then remove from oven and cut into diagonal pieces (however thin/thick you want your biscotti – I recommend fairly thin)
- Turn all slices on sides and return to oven for 4-5 minutes
- Take out, and turn slices on the opposite sides, and return to oven for another 4-5 minutes
- Let cool
- While cooling, put white and milk chocolate chips into a big bowl, cover, and heat in microwave between 4 and 5 minutes
- While chocolate is heating, cut each piece of biscotti in half
- Stir chocolate so it all combines together
- Dip the ends of each ‘bite’ of biscotti into the chocolate
- Place on a plate or pan lined with parchment paper
- Place in refrigerator for 10 minutes

(And if you’re giving them as gifts, as I did, you can place them in small plastic bags, tie with various colors of ribbon, add a little notecard with a hole punch, and it’s as easy as that)
