See what I did there?!
A couple weeks ago I was away with my mom for a few days and I had the best breakfast I’ve had in a long time. It’s not going to sound like anything too thrilling, I’m sure, but it was pretty epic, in my mind. It was an egg frittata with the most delicious goat cheese, tomatoes, and spinach. Seems basic, I know, but it was just so good. Since then I’ve been on the hunt for frittata recipes considering I’ve a) never made a frittata and b) heard they are super simple to whip up. I’m sure I’m overly ambitious in saying that I’d love to make frittatas a few mornings during the week. I mean, let’s be real, typically my breakfast consists of grabbing something on the way out the door or picking up a breakfast sandwich somewhere on the way to the office. BUT, maybe I’m turning over a new leaf. MAYBE I’ll start to make breakfast in the mornings! And, if I do, these are the recipes I’d like to make.
Turkey, Kale, Onion, & Sundried Tomato Frittata
We make frittatas all the time! They are SO simple and are great for a quick breakfast, lunch or dinner using just a few ingredients from the fridge. Our fave combo at the moment: crispy pancetta, caramelized shallots, broccoli and parmesan cheese. 🙂
