This weekend I made an appetizer that turned out absolutely delicious. I made spring rolls, but not the type of spring rolls you may find at your nearest Asian restaurant. I made spring rolls filled with ground turkey, onions, and parmesan cheese, with dipping sauces (soy and marinara). They sound simple, but those that I cooked for were raving about them. If you’re looking for a pretty easy appetizer to make (although if you make enough they can easily be a meal) this should be your next recipe to try. Mmmm…
Ingredients:
- 12 Perdue turkey meatballs (I cheated because I didn’t have time to make them from scratch, but Perdue is great because they already come seasoned)
- 1 medium sweet onion
- 1 cup of parmesan cheese flakes
- 1 package of spring roll sheets (they usually come in packages of 10-12 and can easily be found in the sushi section of your grocery store)
- Boiling water
- Non-stick cooking spray
- Olive oil
- Salt and pepper
Directions:
- Preheat oven to 350 degrees
- Cut onion into small pieces and sauté them in a pan with olive oil, add salt and pepper while cooking
- Heat turkey meatballs in microwave
- Put sautéed onions and meatballs into food processor until the meatballs are turned into ground turkey meat and the onions are finely chopped (you may have to do this in shifts depending on how big your food processor is)
- Add in the flakes of parmesan cheese into the food processor and mix all together
- Once these ingredients are mixed together in the food processor, take your spring roll sheets (they start out hard) and place them (one at a time) into a baking dish filled with boiling water.
- Leave each sheet in the boiling water for about 10-15 seconds each, until soft, and you may need to refill the boiling water throughout the process
- As spring roll sheets are done, place them, one at a time, on a tea towel to dry out a bit
- Place them, one at a time, flat on a big plate
- Fill and roll as you’d like
- Place them on a baking sheet lined with parchment paper
- Once all are rolled, spray non-stick cooking spray all over them and bake in oven for 10 minutes or until as golden on top as you’d like
- Serve with dipping sauces of choice
